Stinky tofu, the iconic “bizarre food” in China, is a form of fermented tofu with a strong odor. In Shaoxing of Zhejiang Province, stinky tofu is a must-try street food. It’s made by soaking tofu in a fermented brine of vegetables. The brine is made first and left to fester for weeks, sometimes months, resulting in a putrid, rotting brew. Then, workers will add tofu for further fermentation. Stinky tofu is usually deep-fried and accompanied by spicy or sweet sauce. In spite of the fact that many people are scared away by its unique smell, loyal fans insist this snack is something that smells stinky, but tastes good.
