Full recipe in description! Ginger & Scallion Lobster Noodles at Home

Ingredients:

3 x 600g Red Rock Lobster
3 x Scallion
2 x Corriander
1 Pack Yee Mian Egg Noodles
Flavoured Chinese Chicken Stock
Salt to Taste
1/2 Tbs YumYum
1/2 Tbs Chicken Powder
1 tsp White Pepper
1 Tbs Sesame oil
3 Tbs Chinese Cooking Wine
1/2 Tbs Sugar
1 Tbs Cornstarch

Instructions:

In 3 seperate pots, bring the Chicken stock to a boil, a large pot of water to a boil and 1L of oil to 180 degrees.

1. Cook egg noodles boiling water for no longer than 1min.

2. Strain noodles (don’t pour away all the hot water and leave it for later) and wash under cold water till completely cooled. Set aside.

3. Cut Lobster into desired size or exactly like video and coat in cornstarch.

4. Fry Lobster on wok with 1.5 litres oil at 180degrees for 2mins or until flesh is opaque. Place lobster head in hot water for 3-4 mins until completely cooked and plate standing.

5. Pour out the oil into an oil pot. This allows you to reused the oil for other dishes.

6. In the same wok on HIGH add ginger, garlic, white part of spring onion stir fry for 1 min till fragrant.

7. Add Lobster back into the wok and immediately add YumYum, Chicken powder, White Pepper, Sugar, Chicken stock to the wok

8. Thicken with potato starch slurry and finish off with Sesame oil and Cooking wine.

9. Pour remaining hot water over cold noodles.

10. Place noodles on a plate and Lobster with sauce on top.

11. Garnish and remember to mix before you enjoy 🙂
