【Ingredients】
200g king oyster mushroom
3 heads of Shiitake mushroom
50g carrot
50g green pepper or Cubanelle pepper – the spicy kind is authentic
50g bamboo shoots
5g dried black fungus
10g scallion
10g garlic
5g ginger
2-3 tbsp oil

1.5 tbsp Pixian fermented bean paste (spicy and salty)

Sauce:
4 tbsp water
1.5 tbsp sugar
1.5 tbsp vinegar
1 tbsp soy sauce
¼ tsp dark soy sauce (opt)
1 tsp corn starch

【Instructions】
1. soak dried black fungus in cold water 30 minutes before use, then wash off dust and drain
2. shred all vegetables into 2-3 mm strips
3. blanch shredded vegetables in boiling water for 2 minutes
4. mince the scallion, garlic, and ginger
5. mince Pixian bean paste
6. prepare the sauce and set it aside
7. place oil in frying pan on low heat, then stir fry scallion, garlic, ginger mince, and bean paste till aromatic
8. add blanched vegetables to the pan and stir fry for 2 minutes
9. pour in the sauce and turn on high heat, then let the sauce thicken on high heat and coat vegetables evenly. Done
