-One of the most Popular Chinese dish from the cuisine, popular street food Iā€™m using Indonesian Noodles (Hakka noodles )are boiled Al dente and stir fried with colourful veggies & Sauces. Pair it up with dry paneer/ cauliflower manchurian, chilli chicken for a Chinese perfect meal

Ingredients
-300g Indonesian noodles/veg Hakka noodles
-200g Mushroom cut
-1/2 capsicum cut lengthwise
-1 onion cut lengthwise
-1 carrot shredded
-1/2 zucchini shredded
-1/2 cabbage shredded
-10 garlic finely chopped
-2 Thai red chillies cut
-4-5 boy choy (separate white stems & leaves )

SAUCE MIXTURE
-3 tbsp light soy
-1 tbsp dark soy
-1/2 tbsp Worcestershire sauce
-2 tbsp oyster sauce
-1 tsp freshly crushed black pepper
-1/1 tsp vinegar
-dash sugar
-1 tsp sesame oil
-1 tsp chilli flakes
-1 tbsp tomato ketchup
-salt to taste
-Mix all the ingredients & set aside

-COOK NOODLES
Cook noodles according to package instructions
-in a large vessel/dish
Cook the noodles in boiling water for about 5-6 minutes stir tenderly until they loosened & Al dente, drain the hot water and then sprinkle cold water to stop the cooking & drizzle oil and set aside

LETS COOK
-Heat oil in a large dish over high heat, add chopped garlic, Thai red chillies stir and cook for 1 minute
-Now add Bok choy white stems, onion stir and cook for 2 minutes
-Add shredded carrot, capsicum stir, add shredded cabbage &zucchini cut mushrooms, Bok choy leaves stir and cook fry until the vegetables shrink slightly, sprinkle salt & pepper
-Now add few tablespoons of sauce mixture stir fry and cook for a minute
-Now add cooked noodles with a help of a scissor cut noodles
-add remaining sauce mixture continue to stir and cook until the sauce well combined with noodles & veggies
-( if you are a Non-veterinarian add scrabbled egg and shredded chicken pieces)
-Enjoy with cauliflower or paneer Manchurian, Chilli chicken
