Ingredients:

4 cups of chicken broth
3 eggs, lightly beaten
2 green onions, thinly sliced
1 tsp soy sauce
1/2 tsp ginger, grated
1/2 tsp garlic, minced
Salt and pepper, to taste
1 tbsp cornstarch (optional)

Instructions:

In a pot, bring the chicken broth to a boil over medium heat.

Add the grated ginger, minced garlic, and soy sauce to the pot. Let the soup simmer for a few minutes.

While the soup is simmering, slowly pour the beaten eggs into the soup while stirring gently with a fork or whisk. This will create the egg drop effect.

Add salt and pepper to taste, and stir in the sliced green onions.

If you want to thicken the soup, mix 1 tablespoon of cornstarch with 1/4 cup of water and add it to the soup while stirring continuously. Let the soup simmer for a few more minutes until it thickens.

Once the soup is ready, ladle it into bowls and serve hot.
