This Chinese dish is easy to make and ready in about 30 minutes. Filled with vegetables, super nutritious & flavorful.

Authentic Hunan Sauce made with Sambal Oelek chili paste!!

Method –

In 2lbs boneless chicken chunks, add one teaspoon salt, one teaspoon cornflour, one teaspoon paprika powder, one teaspoon all purpose flour & half teaspoon black pepper powder. Mix well and set aside. Marinate for about an hour.
In a wok, add one cup oil. Fry the marinated chicken chunks until they’re golden brown in color (for approximately 6-7 mins on medium high heat). Take the chicken chunks out in a plate and set aside.
In a separate pan, add two tablespoons oil and fry four chopped garlic bulbs and one green chili. Fry until the garlic is brown in color. Meanwhile, chop and wash the bell peppers, I took three medium sized different colored bell peppers. Add chopped bell peppers in the pan then add two tablespoons oyster sauce, three tablespoon chili paste (Sambal Oelek), two tablespoons soya sauce, two tablespoons chili oil, one third cup orange juice (optional) and half tablespoon brown sugar. Mix well cook for about 2 mins then add the fried chicken chunks in the pan. Mix well. Then add 1/3 cup water with 1 tablespoon cornflour to thicken the sauce. Cook for a minute. Garnish with chopped green onions!

For vegetable fried rice, in a wok, add two tablespoons oil and one chopped garlic. Fry until the garlic is dark brown in color (TIP- Burn garlic adds to flavor in fried rice).
Meanwhile, Chop and wash 1 cup of your favorite vegetables I’ve used bell peppers, purple cabbage, peas, carrots and onions. Add vegetables in the wok when the garlic is dark brown in color. Fry on high flame for a minute. Now add two tablespoons chili garlic sauce & 1/4 cup soya sauce. Mix well, cook for about 2 mins on high heat then add two cups of boiled rice, add one teaspoon salt and half teaspoon garlic powder & one teaspoon black pepper powder. Mix well and then add one teaspoon sesame oil(optional).
Dish out the rice in the rice platter or tray! Serve it hot with Hunan Chicken!
