  2. i agree with steven. to me peking duck should be something special. maybe not 340 but $1 peking duck sounds like food inflation to me. too much of a good thing becomes less valuable.

  3. mapo tofu is sichuanese and xiaolongbao is shanghainese. the distance between shanghai and sichuan is roughly similar to the distance between paris and warsaw. chinese food has a lot of variety and you won't see a 'chinese food restaurant' in china, it's always regional, or else it would be too generic a term.

  4. Normally when it comes to the 'expensive' option it's just some ridiculous nonsense like it being covered in gold leaf or it being served in a special tray with mist coming out but Hwa Yuan Szechuan I think is actually decent value, it's not cheap, but for $340 you're sharing a 9 course meal with 4 friends and enjoying genuinely world class food whilst learning what Chinese food was like 40-50 years ago. I don't mind paying a bit more at a restaurant if I not only get an exceptional meal of the highest quality but an education and a benchmark I can compare against from then on.
